it's a bit late ^^ my list is like this:
1- iskender kebab
2- turkish manti [kind of dumpling]
3- lahmacun
4- kokoretsi
5- dolma and sarma [especially with the olive oil, eventhough i like eating meat but you should eat sarma and dolma with the olive oil]
maybe you don't need this list anymore, but i highly recommend you to eat them some time
